Most pegheads are considerably wider than their necks. So, to save wood, some builders make the neck out of pieces just wide enough for the fat part at the heel, and build up extra width at the peghead by gluing on little extensions.

We call them "ears"

I suppose it's because the ears are the widest part of the head. Sometimes they're called "wings," but mostly they're just ears.
